Alessia is a young woman with many passions, the biggest ones being experimenting in the kitchen, traveling, and going to the mountains. After graduating in Mechanical Engineering from the University of Udine, she embarked on a year-long solo journey that served as a catalyst to pursue her dreams.

In 2017, she launched the blog ‘The Vegan Side of The Moon,’ where she shares everything related to the vegan lifestyle and her creations, having fun experimenting with new ingredients and colors.
She has worked as a chef at a retreat center in Austria and contributed to creating menus for various vegan restaurants around the world. Currently, she works as a content creator, producing video recipes that she shares on social media, and organizes in-person and online training courses. Due to its numerous properties and incredible ability to enhance any dish with umami, fermentation is a facet of plant-based cooking that she finds highly captivating. Consequently, you’ll often discover a fermented twist in her recipes. In her culinary endeavors, Alessia adores incorporating wild and foraged herbs, seasonal produce, and she’s deeply committed to sustainability, actively fighting against food waste.

Ortaggi Gourmet: A 3-course dinner where seasonal vegetables take center stage, reimagined in a gourmet style – duration 4 hours, afternoon + dinner
Vegan Brunch: Perfect for those in-between moments when it’s too late for breakfast but too early for lunch. When you crave both sweet and savory. A brilliant solution, reimagined in a vegan twist – duration 4 hours
Lacto-Fermentation of Vegetables: In this course, you will learn how to ferment vegetables using the two main methods (dry and in brine), to create probiotic-rich ferments beneficial for the gut and capable of adding umami to any dish.
Sugar-Free Desserts: In this course, you will learn how to make delicious desserts without using sugar, discovering new methods and ingredients to use as sweeteners. Cheesecake, banana bread, bundt cake, and energy balls are just a few of the desserts you can choose to prepare, with the option of making them gluten-free as well.

What’s involved

Villa and dedicated spaces for you, along with breakfasts for 4 nights.

Dinner for 1 day, guided tasting aperitivo for 4 days.

Day 1

Arrival

Afternoon reception, welcome toast, dinner at your leisure with a meal prepared by the young people of the social farm or with locally sourced products available at the villa.

Day 2

Gourmet Vegetables

Morning: visit an organic fruit and vegetable company and purchase products.
Afternoon: “Gourmet vegetables” lesson: 3-course dinner in which the protagonists are seasonal vegetables, revisited in a gourmet key – duration 4 hours, afternoon + dinner.
Evening: relax in the villa.

Day 3

Lactofermentation of vegetables

Morning: Walk around wild herbs and picking.
Afternoon: lesson “Lactofermentation of vegetables”: in this course you will learn to ferment vegetables with the two main methods (dry and in brine), to create fermented products rich in probiotics, beneficial for the intestine and capable of enriching any umami dish.

Day 4

Vegan brunch

Morning: “Vegan Brunch” lesson: when it’s too late to eat breakfast but too early to eat lunch. When you crave both sweet and savory. An ingenious solution, revisited from a vegan perspective – duration 4 hours.
Afternoon: Wine and food tasting and wine pairing.
Evening: conclusion bonfire.

Day 5

Sugar-free desserts

Morning: “Sugar Free Sweets” class: in this class you will learn how to make delicious sweets without using sugar, discovering new ways and ingredients to use as sweeteners.
Cheesecake, banana bread, bundt cake and energy balls are just some of the desserts you can choose to make, with the option of making them gluten-free as well.

Tasting of local products at the villa
Directly at the villa, guided by Leila from Alimentari Tomadin di Cormons, who passionately selects the best Friulian companies, offering high-quality local products. The tasting includes for each person: 3 types of cold cuts and 3 varieties of cheeses with artisan bread and focaccia, an herb frittata, a crostino with mozzarella and anchovy, a hot pasta dish dressed with local cheese, a glass of wine, and a portion of gubana. In this journey, you will be guided through the flavors of tradition and you will have the opportunity to purchase on-site the products you like or visit a store just 10 minutes away that gathers many other specialties.
Price: €30 per person, minimum 2 people.

Forest Experience

The forest bathing is an immersive experience in the woods. It is recognized as therapy thanks to the benefits it brings to health: in particular, it helps improve the regulation of the mind-body complex and the functioning of the immune system. In our forest baths, we walk through the woods surrounding the farm. We engage with its inhabitants and, through mindfulness exercises, we connect with our inner selves, learning to nurture awareness and compassion.

Cycle from Cividale to the vineyards of Colli Orientali del Friuli, or from Collio to Brda, follow the Alpe Adria cycle route or the cycleway that connects Aquileia to the Adriatic sea. Mountain biking excursions or assisted pedal cycle rides, which allow you to enjoy even the uphill climbs without effort, making e-bikes a suitable means of transportation for everyone.
